Favorite Recipes


This recipe came from my Mom, Annette Kemp and was a traditional treat each Christmas at our house. Hope everyone will enjoy them.

1-- 6 oz. pkg. nestles choc. chips (semi-sweet)
1/3 cup plus 1 tbls. sweetened condensed milk
pinch of salt
1/2 tsp. vanilla

Melt chocolate in microwave, do not burn....quickly stir in milk salt & vanilla and chopped walnuts, or coconut, or raisins (I have also used dried cranberries), then drop by teaspoonfuls onto cookie sheet lined with wax paper. Put in refrigerator to chill. Store in airtight container & enjoy!

Eclair Dessert

Boil together: 1 cup water & 1 stick butter.
Stir in 1 cup flour & 1/4 tsp. salt.
Stir vigorously until mixture leaves sides of pan in smooth ball. Remove from heat.
Beat 4 eggs, one at a time, until smooth and glossy.
Circle dough on greased cookie sheet & bake at 400 degrees for 30 minutes.
Shut oven off, open door & let sit in oven for 15 minutes.
Remove to large serving tray and cool completely.

For cream: Beat 1 pt. heavy cream, 1 cup milk & 2 pkgs. instant vanilla pudding till thick.
Refrigerate.
To serve: Layer cream over crust, melt 1 can chocolate frosting in microwave (not hot, just warm enough to drizzle) and drizzle over pastry. Refrigerate.

Cranberry and Walnut Salad

Arrange the following on individual salad plates:
Start with a mixture of lettuces, baby lettuce, greens, endive, radicio (Dole has a packaged spring mix)
Mix in chopped walnuts
Add sweet dried cranberries
Crumbled gorgonzola cheese
Croutons, the big square ones with dark and light bread work well
Finally add Balsamic Vinagrette dressing

Lisa's Bread Dip

t's really not a recipe so much as just adding
whatever you want in olive oil. My options have been
Parmesan cheese, garlic powder, dried onion, salt,
Italian seasonings-basil, oregano, parsley, etc.,
dried hot pepper, Tabasco sauce, any hot sauce, black
pepper. You can make "garlic/olive oil" bread in the
broiler or just dip the bread into the dip. Enjoy!!


Nan's Spaghetti Sauce

2- one lb. cans of diced or whole tomatoes
3- six oz. cans of tomato paste
Stir in:
2 tblsp. onion salt
1 tblsp. garlic salt
3 tblsp. oil
2 1/3 cups of water
3 tblsp. sugar
1 tsp. salt
1/2 tsp. pepper
1 tsp. oregano
1 bay leaf (optional)
Simmer all of the above for three hours for a delicious sauce.


Luscious Lemon Cake

1 box lemon cake mix
4 eggs
1 can Comstock lemon pie filling

Blend these threee ingredients and pour into 9 x 13' glass dish or
tube pan. Follow baking directions on the cake mix box.
Enjoy after cake is baked and cooled. This luscious cake can be
frozen.

Creme de Menthe Brownies

1/2 cup margarine
1 cup sugar
1 teaspoon vanilla
4 eggs
1 cup all-purpose flour
1 16-ounce can chocolate syrup
1/2 teaspoon salt
Frosting and topping (see below for ingredients & directions)

Cream the margarine, sugar and vanilla. Beat in the eggs, flour, chocolate syrup and salt. Bake in 9-by-13 inch greased pan for 30 minutes at 350 F. Cool. Frost and spread with topping. Refrigerate. Cut while very cold. Makes 3 dozen bars.

Frosting and topping: Blend until smooth 2 cups powdered sugar, 1/2 cup soft margarine and 4 tablespoons creme de menthe. Chill frosting for 1 hour. Melt 6 tablespoons margarine and 1 cup chocolate chips. Cool topping.
